Watermelon and Lychee Cordial

Time: 1 hour

INGREDIENTS:

1.5kg watermelon, peeled and chopped
½ cup lime juice
2 teaspoons finely grated lime zest
1½ cup caster sugar
560g can pitted lychees (don't drain)
Ice cubes, soda water, mint and lime wedges, to serve
Gin or vodka, optional

METHOD:

  1. Puree the watermelon in a food processor, then strain to remove any seeds or pulp. Measure out 1 litre of the watermelon juice.

  2. Combine the watermelon juice, lime juice, zest, sugar and the liquid from the lychee can in a large saucepan. Stir over a medium heat to dissolve the sugar, then bring to a simmer. Reduce the heat to medium-low and cook gently for 45 minutes. Allow to cool then place the cordial into a bottle. 

  3. To serve, place two lychees in a glass with ice and add ¼ cup cordial. Top up with soda water to taste and serve immediately with mint, lime wedges and a dash of gin or vodka, if you’d like.


The watermelon syrup will keep for up to 3 days in the fridge. This delicious cordial is the perfect summer drink, however, let's face it, alcohol makes everything better! Add a shot of gin or vodka to make it that little bit more fun!
