Serves: 12

1 1/2 cups fresh strawberries
2 tablespoons of sugar
2 cups thickened cream
1 tsp vanilla bean extract




  1. In a blender or food processor, blend the strawberries till a liquid consistency. Add the sugar and blend again.
  2. In a separate bowl add the cream and vanilla bean. Stir till combined.
  3. In a popsicle mould poor in the strawberry liquid till one third full. Carefully pour the cream mixture to the top. Be sure to leave a 2cm gap from the top as the mixture will expand during the freezing process. Freeze for 7 hours or overnight.
  4. Before serving remove the popsicle out of the freezer 10 mins before consumption. Pull out of mould and enjoy!
