2 racks of pork ribs 750g approx.
330ml cola
1 chopped fresh chilli
2 cloves garlic, bruised
1 cups passata
¼ cup brown sugar
1 tsp salt
2 tbls kecap manis (sweet soy)



  1. Preheat oven to 120c. In a large baking dish cover the ribs with the cola, garlic and chilli. Cover the dish with foil and bake for 90mins.
  2. Over a low heat in a small saucepan add the passata, sugar and kecap manis. Allow to simmer until sugar has dissolved.
  3. Take the ribs out and place on a pre lined baking tray. Using a pastry brush, baste the ribs with the saucepan mixture over all the ribs.
  4. Preheat a BBQ till slightly smoking. Place the ribs on the BBQ and re-baste the ribs three more times with 10 minutes in between each baste. Serve immediately.
