Time: 10 minutes + overnight refrigeration

INGREDIENTS:

1 ½ cups rolled oats
1 cup apple juice
1 Granny Smith apple, coarsely grated 
¼ cup sultanas 
1 teaspoon vanilla bean paste
1 cup vanilla yoghurt
1 teaspoon ground cinnamon 
1 tablespoon rice malt syrup
2 tablespoons roasted hazelnuts, chopped 
2 tablespoons pepitas (pumpkin seeds)
Fresh berries, to serve

METHOD:

  1. Combine the rolled oats, apple juice, grated apple, sultanas, vanilla, yoghurt, cinnamon and rice malt syrup in a large bowl and mix well. Cover with plastic wrap and place in the fridge overnight.

  2. To serve, spoon the bircher into bowls or glasses and top with hazelnuts, pepitas and fresh berries.
