SAVOURY INFUSED TOFFEE WITH DOUBLE BRIE
Time: 15 minutes
200g double brie or any other good quality white mould cheese
4 sprigs of thyme
1 sprig of rosemary
2 cloves garlic, smashed
½ cup caster sugar
serve with water crackers
- Let the cheese come to room temperature.
- Over low heat in a small saucepan add the sugar, ½ cup water, herbs, garlic and pepper. Do not stir the mix.
- Using a sugar thermometer, let the mix get to 148c and then remove instantly. Pour over the cheese and allow to rest for 5 minutes. Serve immediately with water crackers.
