Rhubarb Daiquiri

Time: 15 minutes

INGREDIENTS:

1 cup chopped rhubarb
¼ cup caster sugar
Lime wedges
2 tablespoons salt 
160ml tequila
40ml Cointreau
40ml fresh lime juice
8 frozen strawberries

METHOD:

  1. Combine the rhubarb, sugar and ½ cup of water in a small frypan over a medium heat. Cook, stirring, for 10 minutes or until the rhubarb softens and the mixture is syrupy. Transfer to a bowl to cool.

  2. Prepare the glasses by rubbing the rims with a lime wedge, then dip into salt spread out on a plate. 

  3. Blend the rhubarb mixture, tequila, Cointreau, lime juice and frozen strawberries in a blender until thick and smooth. Pour into the prepared glasses and serve immediately.
