Nectarine & Burrata Summer Salad

Ingredients:
1 punnet of cherry tomatoes, halved
1 nectarine, sliced
1/2 red onion, thinly sliced
2 thin slices of sourdough, toasted
1 burrata
4 sliced prosciutto
Basil leaves
Dressing
2 Tbls olive oil
1 tsp oregano (fresh or dried)
1 lemon, juiced
salt and pepper
METHOD:
In a serving bowl, add the tomatoes, nectarine and onion. Add the burrata to the centre of the dish and then place the toasted sourdough and prosciutto around the burrata.
For the dressing, add all the details in a small bowl and mix until well combined. Spoon over the salad and top with fresh basil leaves.
