Cheesy Quesadillas

INGREDIENTS:

200g hummus 
2 teaspoons ground cumin
1 teaspoon ground coriander 
16 flour tortillas
4 bulb spring onions, thinly sliced 
2 cups baby spinach leaves
500g tasty cheese, grated 
2 avocados, smashed
1 long red chilli, thinly sliced
½ cup sour cream

METHOD:

  1. Mix the hummus, cumin and coriander until well combined. 

  2. Lay out 8 tortillas and spread with the hummus mixture. Top with onion, baby spinach and cheese. Place the remaining tortillas on top. 

  3. Heat a large chargrill pan over a medium heat. Cook the quesadillas for about 2 minutes each side until golden and the cheese has melted. Cut into quarters and serve with smashed avocado, chilli and sour cream.

If you’re a legitimate Mexican you will find this recipe rather offensive…but that’s okay, let’s not build a wall between us.
