Caramelised Peaches with Olive Oil, Rosemary & Honey Cream Cheese

Ingredients:
6 Peaches (yellow or white), halved
2 Tbls caster sugar
1 Tbls olive oil
1 tsp vanilla
2 spring rosemary
300ml thickened cream
150g cream cheese, room tem
2 Tbls honey
METHOD:
In a mixing bowl, add the peaches, sugar, olive oil, vanilla and rosemary. Toss until mixed and well coated.
In a non stick pan over medium heat, cook the peaches for 4 - 5 minutes or until gold on each side. Remove from the pan and allow to come to room temperature.
While cooling, in a mixing bowl add the cream and cream cheese. Beat or whisk until thickened and smooth. Stir in the honey.
To serve, add the honey cream mixture to the bottom of a bowl. Top with the peaches and be sure to drizzle any remaining pan juices.
