Macadamia Crusted Lamb

INGREDIENTS:

¾ cup macadamias
¼ cup chopped parsley
1 garlic clove, roughly chopped 
2 tablespoons olive oil
2 tablespoons fresh rosemary
1 lemon, zest finely grated
2 x 250g lamb racks
1 tablespoon Dijon mustard

METHOD:

  1. Preheat oven to 200°C (180°C fan-forced). Combine the macadamias, parsley, garlic, olive oil, rosemary and lemon zest in a food processor. Pulse until chopped and well combined. 

  2. Stand the lamb racks on a baking tray lined with baking paper. Using a pastry brush, paint the mustard over the meat and then press the macadamia crust mixture onto it. Bake for 25-30 minutes for medium-rare. Stand the meat to rest for 5 minutes before serving.
